UHT and aseptic packaging

Have you ever noticed how some milk in the supermarket are not refrigerated? These milk can last for months under room temperature because they have undergone ultra high-temperature (UHT) processing, which kills all bacteria, and are then packaged in sterilized carton boxes under a very clean (aseptic) environment. If there is no bacteria in the milk, the milk won’t spoil. Our advanced sous-vide aseptic packaging (ASAP) works in a similar fashion. By sterilizing all bacteria in food and then packaging it under an aseptic environment, we can prevent food such as a medium-rare steak from spoiling.

你有沒有發現在超市售賣的牛奶有些沒有被冷藏?這些牛奶能夠在室溫下保存,是因為它經過了超高溫加熱(UHT)處理,此技術能殺死牛奶中所有細菌。處理過後,牛奶會在極度乾淨(無菌)的環境下進入已被消毒的包裝。牛奶因為沒有了細菌,所以在室溫下也不會變壞。「先進真空低溫無菌包裝」(ASAP)技術的操作原理其實大同小異,我們只要殺死食物中的細菌,然後將食物在無菌的環境下進行包裝,食物(例如一塊三成熟牛扒)便能夠在室溫下長期保存。
