Advanced sous-vide aseptic packaging saves cost
We conducted a retail price analysis on common imported food items sold in Hong Kong supermarket from September to October 2018. We found that if advanced sous-vide aseptic packaging (ASAP) technology was to be adopted, the price of peaches, carrots, salmon and scallops would be greatly marked down. The price cut is largely due to the elimination of cold-chain logistics, cold-chain storage and wastage disposal.
